Mom’s Breakfast Casserole; my way

There’s absolutely nothing wrong with my mom’s breakfast casserole. It is delicious! We call it “semi-world-famous” and dine on it for special occasions such as Christmas. It’s so comforting and filling and just good. My mom is a rule follower. She has a recipe that is good, and she follows it. Down to the method of layering the cheeses. 😏

I, on the other hand, like to think of recipes as a starting point. A delicious guideline for knowing what is good. And if I don’t have a specific ingredient, I tend to just go with what I have that will work and just go with it. This is where mom and I are different. And this is not a bad thing! It just is what it is.

This breakfast casserole is mom’s standby recipe that has worked for the ages. It is proven. What I changed is the bread base. I had some Golden Chick rolls that were past their prime..which is usually the perfect kind of bread for breakfast casserole..so it got me thinking; what if? What if we use these Golden Chick rolls in place of the hot dog buns that we usually use. How can this be wrong? Have you ever had a Golden Chick roll?? They are yeasty roll heaven! It didn’t matter that it was 9pm and no grocery store near me was open and I didn’t have half and half or heavy cream. It didn’t matter that I didn’t have Swiss cheese (sorry mama!!) 🥰

I decided to throw this together with what I have and just see.

Result = YUM! Oh guys, branch out and try some other bready bases in your breakfast casseroles because this little trial was a success!

The original recipe ⬇️

Mom’s Breakfast Casserole

🥚1 1/2 lb sausage, browned

🥚 stale hot dog buns to fill a 9x13 pan (or hamburger buns, any thick bread-better to soak up the egg mixture) allow to sit out and dry up good.

🥚2 c Swiss cheese, grated

🥚2 c cheddar cheese, grated

🥚6 eggs

🥚1 tsp salt

🥚1 tsp black pepper

🥚1 tsp Worcestershire sauce

🥚1 c half and half

🥚1 c milk


Spray 9x13 pan with non-stick spray. Line bottom of pan with bread. Sprinkle browned and drained sausage on top And then half of the cheeses. Mix up the rest of the ingredients and pour over the top (mixing the whole time you are pouring to keep the salt and pepper from settling). Cover and refrigerate overnight. In the morning, bake covered at 350 for approximately 45 minutes, or until eggs are set in the middle.



So, you know that I used Golden Chick rolls as the bread base rather than hot dog buns. Feel free to try different breads as your base! See what you like! I also didn’t have half and half (or heavy whipping cream, because honestly, I’ve used that too with glorious results!) so I just used all milk. Guess what? Still delicious! 🤷🏻‍♀️ I didn’t have Swiss cheese. I had Colby/Jack, Parmesan, and shredded quesadilla cheese. So that‘s what I used!

The cheese was so melty and delicious! You may also notice that I didn’t use a 9x13 pan.. c’est la vie! I adore recipes because they show me what has been proven to work. But then I love to try variations and see how it goes, too.

Y’all should truly try my mom’s breakfast casserole recipe. You will love it! But also, don’t be afraid to try your own thing. ☺️
